Whether <strong>Bayonne,<\/strong> Iba\u00efona, Aldudes, Kintoa or Serrano ham, they are salted and matured in natural drying sheds on the windswept mountains of the <strong>Basque Country<\/strong>. The flavors develop over time. Enjoy a piperade of <strong>Bayonne<\/strong> Ham, a Basque specialty made with tomatoes, onions and <strong>Espelette<\/strong> pepper .   <\/p>\n<\/div>\n<\/div>\n\n<h2 class=\"wp-block-heading\">Espelette pepper<\/h2>\n\n<p>What would Basque gastronomy be without its little red pepper? It&#8217;s the spice everyone&#8217;s clamoring for! In powder, jelly, mustard or pur\u00e9e, Piment <g id=\"gid_0\">d&#8217;Espelette<\/g> AOC delicately flavors and spices up all your dishes. Buy it at markets, delicatessens and during <a href=\"https:\/\/www.camping-biper-gorri.com\/en\/blog\/the-espelette-chilli-festival-last-weekend-in-october\/\">the Piment d&#8217;Espelette festival<\/a>!   <\/p>\n\n<h2 class=\"wp-block-heading\">Charcuterie and cured meats<\/h2>\n\n<p>Dried sausage, salami, chorizo, black pudding&#8230; All are produced by local artisans. Among the must-try charcuterie specialties are txistorra, the Basque version of merguez often served as tapas; txirula, a flute-shaped dry sausage with <strong>Espelette<\/strong> chilli pepper; and the traditional smoked ventr\u00e8che, served pan-fried with a fried egg. <\/p>\n\n<h2 class=\"wp-block-heading\">Foie gras and duck confit<\/h2>\n\n<p>The <strong>Basque region<\/strong> is famous for its foie gras and duck specialties. Whole or semi-cooked foie gras, duck legs, magret, manchons, gizzards and other &#8220;canardises&#8221; will delight your taste buds with their subtle aromas and delicate flavors. Basque ducks are raised in the open air and fed on cereals grown and stored on the farm.  <\/p>\n\n<h2 class=\"wp-block-heading\">Cheeses<\/h2>\n\n<p>The <strong>Basque Country<\/strong> is also the land of farmhouse cheeses! These pressed sheep&#8217;s, cow&#8217;s and goat&#8217;s cheeses mature over time. They combine typicality and know-how. All come from small local farms. Among the long list of Basque cheeses is Ossau-Iraty, the most Pyrenean of all ewe&#8217;s milk cheeses! Take advantage of your <a href=\"https:\/\/www.camping-biper-gorri.com\/en\/\">camping holiday in the Basque Country<\/a> to follow the Route du Fromage AOP Ossau-Iraty, from Saint-Jean-de-Luz to Gourette, via Espelette, Hasparren, Saint-Jean-Pied-de-Port and Maul\u00e9on.     <\/p>\n\n<h2 class=\"wp-block-heading\">Seafood products<\/h2>\n\n<p>We can&#8217;t talk about Basque gastronomy without mentioning seafood. From ttoro basque (hake soup), to chipirons a la plancha, to tuna ventr\u00e8che, discover the richness of these products from the fishing ports of <strong>St Jean de Luz<\/strong> and <strong>Ciboure<\/strong>. Don&#8217;t miss a good cod cooked Biscay style, with tomatoes and peppers. Unless, of course, you prefer a pot of Basque crab (txangurro) or grilled sea bream from Oiartzun. The hardest part is choosing!   <\/p>\n\n<h2 class=\"wp-block-heading\">Pastries, confectionery and other sweets<\/h2>\n\n<p>No gourmet vacation in the <strong>Basque Country<\/strong> is complete without a detour to <a href=\"https:\/\/www.camping-biper-gorri.com\/en\/blog\/what-to-do-in-bayonne-must-see-places-to-visit\/\">Bayonne, the chocolate capital<\/a>. Here, you&#8217;ll have to try the Kanougas (soft caramels) and the famous Mouchous (macaroons) from Maison Pari\u00e8s. In <strong>Saint-Jean-de-Luz<\/strong>, macaroons are also in the spotlight. These were created in 1660 for the marriage of the Sun King and the Infanta Maria Theresa. Divine! Another emblematic confection to be savored with eyes closed: the Basque touron made with roasted almonds and honey. Hummm&#8230;it&#8217;s a mouthful! We&#8217;re also crazy about <strong>Itxassou<\/strong> black cherry jam, blueberry jam, apricot jam, fig jam or raspberry jam&#8230; we&#8217;ve got it all!
