Well, we have to go back in time to the discovery of <g id=\"gid_1\">America<\/g> by <g id=\"gid_2\">Christopher Columbus<\/g>. It was then that Europeans first discovered chillies, which had been cultivated for thousands of years in <strong>South America<\/strong>. <strong>The Espelette pepper<\/strong>, meanwhile, was introduced to <strong>France<\/strong> in the 17th century, thanks to the Spanish conquistadors who had discovered it in <strong>Mexico.<\/strong> But it&#8217;s in the small Basque province of <strong>Labourd<\/strong> that the pimento has found its chosen terroir, where it has been cultivated for four centuries.  <\/p>\n<\/div>\n<\/div>\n\n<h2 class=\"wp-block-heading\">The secret ingredient to transform your dishes<\/h2>\n\n<p><strong>Piment d&#8217;Espelette<\/strong> is one of the star ingredients of Basque cuisine. Learn how to use it to enhance your dishes and impress your guests. In <g id=\"gid_1\">Basque gastronomy<\/g>, <g id=\"gid_2\">piment d&#8217;Espelette<\/g> is a versatile ingredient, long used to replace pepper. It adds a touch of spice to many traditional dishes, from piperade to poulet basquaise and <g id=\"gid_3\">veal Axoa<\/g>. <g id=\"gid_4\">Piment d&#8217;Espelette<\/g> is mainly consumed in powder form. You can sprinkle <strong>piment d&#8217;Espelette<\/strong> on scrambled eggs, hash browns, or even desserts such as apple pie or hot chocolate.    <\/p>\n\n<h2 class=\"wp-block-heading\">A jewel of Basque cuisine protected by a PDO<\/h2>\n\n<p>Piment d&#8217;Espelette is the only spice in <strong>France<\/strong> to benefit from a Protected Designation of Origin (PDO), which means it can only be produced in a production zone limited to ten Basque communes around the village of <strong>Espelette<\/strong>. August 15 traditionally marks the start of the harvest. The peppers are hand-picked and sun-dried for several weeks before being ground into powder. Only peppers that are at least 80% red are harvested. Drying is completed in an oven. It&#8217;s rich in vitamin C and antioxidants. It was its medicinal virtues and anti-bacterial properties that first made it famous. Chillies were powdered and applied to meats to improve preservation. The Spanish conquistadors used it for therapeutic purposes, as did the <strong>Aztecs<\/strong>. However, be careful not to overuse it, as it can also be irritating to the stomach.     <\/p>\n\n<h2 class=\"wp-block-heading\">Espelette chilli pepper on the Scoville scale<\/h2>\n\n<p>To assess the strength of a pepper, we use the <strong>Scoville<\/strong> scale, named after its inventor <strong>Wilbur Lincoln Scoville<\/strong>. This scale measures the amount of capsaicin, a chemical compound that gives chillies their pungency.
